“Camus is the grand cru master and one of the most respected winemakers in Burgundy. He has spent a lot of time and effort working with the French government and with winemaker organizations in order to ensure the quality standards of all Burgundy wines. Hubert Camus still uses the old school methods that have been passed down from his ancestors: hand-picking, traditional vinification, 14-18 months’ "elevage" in oak barrels. The wines are unfiltered; so there is often sediment in these great grand crus. This adds to the flavor—as well as the cellar-ability—to these wines.”
